Menu: Oct 2-5

We are making so much progress on our home. It's really starting to come together, and I'm really excited about it! Hoping to get some new pictures taken here, soon. One thing we are finding is that, for whatever reason, our apartment gets VERY warm without any assistance from us. Even if we leave the door open with a nice cool breeze coming in during the evening, it warms right back up again when we close it. All I can think is that the neighbors must have their heat on full force! But at least it means I don't expect much in the way of a heating bill this winter.

Wednesday:
Chippy Dippy!

We have a super busy day of unpacking and organizing today, so a nice, easy dinner is called for. It is really nice to be able to just have two bowls and a spoon or two to wash when dinner is over!

Thursday:
Roast Chicken Dinner

Another busy day, plus going to the laundromat, but despite being a Full On Meal this one is pretty simple. Plus, Extras of everything! Extra chicken for quesadilla lunches, extra veggies and mashed potatoes for Cottage Pie.

Friday:
Slumgullion

I've been craving an old family recipe but it got bumped last week because Mr. Moon got off work extra late that night and I was too exhausted to cook. Seems to be a theme lately. We will see what this weekend has in store, maybe I'll get to cooking that?

Saturday:
Cottage Pie

Leftovers as mentioned, plus leftover french onion soup to make into the gravy, and this is a nice meal that won't take much to prep. Mr. Moon is working a catering event that day out of the restaurant, so we have no idea when he'll be done. But with him riding the bus home most evenings, it makes it easy for me to put dinner together after he gets off work and have it ready or just needing his help with finishing touches when he gets home.


Breakfasts:
I haven't been in the mood for breakfast foods lately. So beyond eggs, this week I'm just buying some extra lunch foods and eating whatever sounds good.

Lunches:

  • Sandwiches
  • Quesadillas
  • Mac & Cheese
